How to make low-fat, high protein Barbie mac and cheese

The “Barbie” movie hype is here, and you can bring her world of pink home. This perfectly-pink Barbie mac and cheese costs under $11, offers high amounts of protein and is low fat.

In total this meal makes three servings, with 390 calories, 32 grams of protein and only 5 grams of fat per serving. Using beets signature color, without focusing on the beets taste, this Barbie mac and cheese is a vibrant meal option.

Barbie mac and cheese ingredients

  • 1 box of Annie’s Shells & White Cheddar Macaroni & Cheese
  • 2 Beets
  • 1 cup of Greek Yogurt
  • 1/2 cup of Low-fat Cottage Cheese
  • 1 cup of Fat Free Mild Cheddar Cheese

Begin by boiling water in a pot. To help the noodles not stick as much you can add a tablespoon of olive oil. While the water is boiling, get your Greek yogurt, cottage cheese, cheddar cheese and two peeled beets, and place them in a blender. Add in a splash of water on top and begin blending.

Blend up the pink sauce

This blend will get you a vibrant pink mixture that has high-protein, healthy fats and the benefits of beets. Plus, it fits the Barbie aesthetic perfectly.

Wait for the water to come to a boil and pour in your Annie’s macaroni and cheese noodles. Annie’s suggests boiling for 8-10 minutes. Keep stirring to keep the noodles from sticking to the bottom of the pan and burning.


After the noodles are ready, strain the water out and pour in your pink sauce plus the Annie’s cheese packet. Mix it all together and watch the pink take over your Barbie mac and cheese. This will make three servings.

If you want to make twice as much, double the recipe except for the beets. Two beets are colorful enough for even a double. Although you can always add in more for health benefits or extra beet taste.
